Summer Vegetable Spaghetti

Ingredients:

  • 2 Cups small yellow onions, chopped

  • 2 cups ripe tomotoes, chopped

  • 2 cups yellow and green squash (I didn't know what this was so I used yellow squash)

  • 1 1/2 cups fresh green beans

  • 2/3 cups water

  • 2 tbsp fresh parsley, minced

  • 1 clove garlic

  • 1/2 teaspoon chili powder

  • 1/4 teaspoon salt

  • black pepper to taste

  • 1 can (6 oz) tomato paste

  • 1 lb spaghetti

  • 1/2 cup parmesan cheese, grated


Directions:

  1. Combine fist 10 ingredients in large saucepan. Cook for 10 minutes, then stir in tomato paste. Cover and cook gently for 15 minutes, stirring occasionally, until vegetables are tender.

  2. Cook spaghetti in unsalted water according to package directions.

  3. Spoon save over drained hot spaghetti.

  4. Sprinkle cheese on top
