  • 2 Cups small yellow onions, chopped

  • 2 cups ripe tomotoes, chopped

  • 2 cups yellow and green squash (I didn't know what this was so I used yellow squash)

  • 1 1/2 cups fresh green beans

  • 2/3 cups water

  • 2 tbsp fresh parsley, minced

  • 1 clove garlic

  • 1/2 teaspoon chili powder

  • 1/4 teaspoon salt

  • black pepper to taste

  • 1 can (6 oz) tomato paste

  • 1 lb spaghetti

  • 1/2 cup parmesan cheese, grated


  1. Combine fist 10 ingredients in large saucepan. Cook for 10 minutes, then stir in tomato paste. Cover and cook gently for 15 minutes, stirring occasionally, until vegetables are tender.

  2. Cook spaghetti in unsalted water according to package directions.

  3. Spoon save over drained hot spaghetti.

  4. Sprinkle cheese on top

What is the most important factor that makes you want a more healthy lifestyle?
The healthier I am while I am still young will add to my being healthier as an older adult. Kinda like how they say "quitting smoking adds days/weeks/months to your life".

What currently works for you in maintaining your healthy lifestyle?
I attend an aerobics/kickboxing class 3-4 days a week.

What is it that you feel could use more work?
Drinking more water, and I'm currently working on that. I need to develop a healtier appetite, as my appetite is 75% non-existant. I would like to learn how to cook lighter meals.

**I feel that before we can make any HONEST lifestyle changes, we must first be able to love and appreciate who we are inside, so here are a little fun "me" questions for you to answer...

What is there about your personality that you like?
I am extremely sarcastic, and people remember me for my sarcasm. I like my sarcasm.

What is something that is uniquely you?
I'm not spontaneous, yet I'm spontaneous. How much more unique can you get than that? LOL!

What do you like to do once the adrenaline starts to flow?
Clean house. When the adrenaline starts to flow, I clean the house like a whirl-wind.

I am so proud of myself. Everyone else is eating Jersey Mikes for lunch. I am sticking with my soup and fruit! :)

Besides we are having subs after I get off work on Saturday (the company is paying) and then Scott has been craving Subway so we will probably eat there this weekend.

My local radio station goes to the local workout place (where my aerobics class is held) and they do various health tips, and today's was rather interesting.

They were talking about when you are forced to eat fast food (i.e. traveling, in a rush) you do infact have some healthier choices on the menus.

Today they discussed KFC and McDonalds.

KFC: If you eat here, have the mashed potatoes and gravy as the potatoes are not fried thus healthier for you even though they are made with milk and butter they are still not as full of calories and fat as fried potatoes are.

Also eat one piece of regular chicken rather than one piece of the extra crispy....extra cripsy isn't the only added extra to that piece of chicken....there is also added calories and fat.

Their potato salad is also a good alternative to french fries, as is their coleslaw.

McDonalds: Sometimes you are forced to eat breakfast on the run. If you stop at the drive through to grab a quick breakfast, opt for the McMuffin that has canadian bacon on it over the one that has sausage. The sausage bisquit has (around about) 500 calories where the one with canadian bacon has only (around about) 300 calories.

Chicken nuggets are also a good thing to order off their menu, and the dipping sauce is generally low in fat.

Tomorrow they will finish up this segment with some other wiser choices at the not so wise fast food joints.

**This is all coming off of my memory from hearing this on my drive into work this morning. So the calorie counts are round about figures.

Well - I did it again. Tonight I have class so I got up in time to exercise this morning. Though I didn't get up early enough as I could only get 30 minutes in instead of 45 but hey it's better than nothing.

I didn't have problems yesterday with my meal plan...I did forget to add coffee into the equation and this girl I work with brought fudge so I had a little piece (it could have been worse) but other than that - I did good.

Last night I served Scott (husband) and myself the following:

  • 3 ounce sirloin steak (well his was bigger)

  • 1 cup of raw broccoli with 2 tablespoons of ranch

  • 1 cup of green beans

  • 1 cup of butternut squash

  • 1 cup of milk

  • 2 tablespoons of steak sauce

It was really good and both of us were full!!! YAY!!!

No one is really participating in this community. :(

This is the book that I am reading now: 10 Habits that Mess up a Woman's diet by Elizabeth Somer

I left it with my mom for today. Last night while I exercised I decided to read on the bike. It made the time go by quicker and it was kind of motivating. In fact, instead of doing 15 minutes bike and 15 minutes gazelle, I did 30 minutes bike (whew - the bike is a lot harder than the gazelle).

Which brings me to my next question: How often do you guys exercise and what do you do?

What's even better? The radishes came from our garden.

ETA - if you ever have too many radishes and want to freeze them:

~Wash Radishes
~Cut into small pieces and remove bad spots
~Blanch in boiling water for 2-3 minutes
~Place in ice cold water & drain well
~Put in freezer bag & freeze

Hi everyone. I am super proud of myself. Mom and I have been exercising since last week. Well, we usually work out after I get off of work. Tonight I have class so I wasn't going to be able to stop by. So I got up at 5:45 IN THE MORNING to exercise. I had to cut it short by 5 minutes so I would get to work on time. But anyone who knows me - knows this is a huge accomplishment.

My question for today is does anyone have any really good and healthy fruit dips or sauces I could put on a fruit salad?
